Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Cook the pasta: Bring a pot of salted water to a boil. Add 1 oz of angel hair pasta (#4) and cook until al dente, about 3–4 minutes. Drain and set aside, reserving a small splash of pasta water.

Make the sauce base: In a skillet over medium heat, melt the butter. Add the diced onions and cook for 2–3 minutes until softened. Stir in the tomatoes and cook for another 1–2 minutes.

Add garlic and seasoning: Stir in the minced garlic, salt, black pepper, and red pepper flakes (if using). Cook for 30 seconds until fragrant.

Create the cream sauce: Pour in the heavy cream and bring to a gentle simmer. Cook, stirring occasionally, until slightly thickened, about 2–3 minutes.

Add cheese: Stir in the Parmesan cheese until melted and the sauce thickens slightly. If the sauce is too thick, add a splash of reserved pasta water. Taste and adjust seasoning as needed.

Combine: Add the cooked pasta to the sauce and toss until evenly coated.

Serve: Plate the pasta, garnish with extra Parmesan or fresh herbs if desired, and enjoy!

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 oz angel hair pasta (#4)

pinch of red pepper flakes (optional for a kick)
